The gonads are responsible for producing the eggs or roe, turn out to be the only edible part of the sea urchin and is most often served raw. It tastes a bit slimey, certainly a bit briny, but you know what they say.. you are what you eat.
This is the "Shako" sushi. Probably not a very commonly heard of one, and often mistaken for just a prawn sushi. It most definitely is not. It is the vicious mantis shrimp.
