What's Cooking Challenge by @jaynie : Wholemeal Deli Loaves

This is my first post for @jaynie’s #whatscookingchallenge and I’m a little bit nervous. Why? Because this is my first attempt of making homemade wholemeal bread from scratch!

But before I continue, I just wanna say thank you to @happycrazycon for the shoutout. Because of her, I’ve had this opportunity to show you guys my hidden talent 😝.

I’ve never known in my life that I can actually bake. I’ve always have this question in my head, ‘what if I’m not doing it right?’

I guess it's true what they say, if you never try, you'll never know what you are capable of.

Today I’m baking a wholemeal deli loaf. Surprisingly, it was not that hard except the kneading part. I opt using a mixer since I wanted to feel the ‘adventurous’ kneading the dough.

Let me start with the ingredients first. I need:

1. 300g bread flour
2. 200g wholemeal flour
3. 10g instant dried yeast
4. 10g salt
5. 50g sugar
6. 350ml water
7. 50g unsalted butter (at room temperature)

And for the topping, I need:

1. White sesame seeds
2. Black sesame seeds
3. Sunflower seeds
4. Oats

And here are the process.

Mix all the ingredients (EXCEPT the butter) in a mixing bowl.
Then pour in the water and mix it altogether using your both hands.

Please excuse myself for using two different type of gloves. I'm testing which gloves are more convenient while kneading. Both failed and bare hands it is 😆.

Once everything is mixed, transfer the dough to a flat, nonstick surface. Knead again and repeat this step until the dough becomes soft, smooth, and firm. By now, I had mixed the butter and knead it together.

Then, transfer the dough into a container and allow to rest for 50 - 60 minutes until the dough doubles the size.

While waiting for the dough to rise, I took the opportunity to had a chilled lemonade Jolly Shandy. I don't really take alcohol in the afternoon most probably because it's so hot here in Kota Kinabalu and I'd prefer carbonated beverages to cool off my body.

Next, transfer the dough onto a floured surface, divide it into two portions, spread it lightly and fold them up and place into loaf tins. I'm using two different types of tins, again for the sake of experimenting 😊.
Then, I'll let the dough proof in a warm place for 40 to 50 minutes.

I'll then take a water and spray it (using a spray bottle) on the dough and sprinkle the tops with the seeds and oats.

Final step, bake both the loafs in a preheated oven (180°C) for 40 to 50 minutes or until the loaves turn into golden brown.

Not bad for a first timer 😛. I'd never thought that the process of baking a bread is fun.Next time, I'm going to try with the mixer. Will save a lot of time and sweats. And now I'm thinking what is my next baking project? Haha.

1st time but still can 'taekwando' with the dough like you have done it thousand time one? I can imagine my dough might fly to the floor if it were my 1st time. Lol. It must be the gene God has put in u lady mama. So good!

Haha, I've tried my best not to let the dough flying some where else. Or else, there's no bread at all.

Surprisingly it turns out good. But now both my arms sore. Too much kneading 😂. Little Matthew is so happy to see mommy’s breads.

Wow! Thanks @jaynie. It was indeed a fun time kneading the dough till the table moved. Didn't realized I knead it too hard.

Your loaves look awesome!! I've always had problems with flour, suffice to say we aren't good friends yet. Somehow despite following the same amount I would still end up screwing up the recipe 😂 you pro! Mintak sikit hahaha and BTW your son is shooooo cute!!
