Ingredients:

🥄 3/4 cup red lentils
💧 1.5 cups boiling water (plus an additional 2 cups room temperature water)
🌱 Optional: Seasonings of choice (e.g., salt, pepper, garlic powder)
🛢 Optional: Cooking oil (for air frying, baking, or frying)

Instructions:

Prep Time: 20 minutes plus overnight refrigeration

Cook Time: 6-8 minutes

Total Time: Approximately 30 minutes active, plus refrigeration

Equipment: Blender, saucepan, whisk, 8x8 inch pan

Servings: 4 servings

  1. Begin by adding 3/4 cup of red lentils into your blender. Pour in 1.5 cups of boiling water on top of the lentils, but resist the urge to blend immediately! Instead, let the mixture soak for 20 minutes to allow the lentils to soften.

  2. After the lentils have soaked, secure the lid on your blender and blend the mixture until smooth. This will form the base of your lentil "tofu."

  3. Transfer this lentil puree into a saucepan and add 2 additional cups of room temperature water. Place the saucepan onto your stove over medium heat.

  4. Wait till the mixture reaches a boil, then begin to whisk. Whisking continuously for 6-8 minutes will be the key to achieving the right consistency. You will notice it becomes super thick, akin to a custard.

  5. Once you obtain the right thickness, pour the lentil mixture into an 8x8 inch pan. Spread it evenly with a spatula or the back of a spoon.

  6. Move the pan into your refrigerator and let it set, preferably overnight, to allow your lentil "tofu" to firm up properly.

  7. After the mixture is set, take it out from the fridge and slice it into your desired portions.

  8. Now, it's time to cook it just the way you enjoy tofu—air fry, bake, or fry it with a bit of oil and your favorite seasonings until it's golden brown and has a nice outside crust.

Cooking Tips:

For extra flavor, consider marinating your lentil "tofu" steaks in your favorite sauce for a couple of hours before cooking.

ENJOY!!!!
