Ingredients
2.5 lbs pork loin (with fat)
2 tbsp salt
½ tsp cumin
1 tsp garlic powder
1 tsp onion powder
1 cup orange juice
½ tsp black pepper
Preparation
Marinate
the pork loin with salt, cumin, garlic powder, onion powder, orange juice, and black pepper. Let it marinate for at least 1 hour.
Deep Fry
: Heat cooking oil and add 2 tbsp pork lard for extra flavor. Drain the marinated pork and carefully add it to the hot oil.
Add 2 bay leaves, 2 cloves, and 2 garlic cloves to the oil along with the pork. After 10 minutes of frying, pour in 1 (20 oz) Coca-Cola for added caramelization and flavor. Fry until the pork is golden and crispy on the outside.
Salsa
5 tomatillos
3 large jalapeños
Small piece of onion
1 garlic clove
Preparation:
Boil the tomatillos, jalapeños, onion, and garlic until softened. Blend until smooth for a fresh, tangy salsa to pair with the carnitas.
