Rojões à Moda do Minho is a beloved traditional Portuguese dish originating from the Minho region. It showcases flavorful marinated pork chunks cooked to perfection, contributing to its hearty and comforting nature. Perfect for family gatherings or a special weekend dinner, this dish is guaranteed to impress with its rich, rustic flavors.
Ingredients
🐖 1 kg pork shoulder, cut into chunks (Choose a local butcher or a brand like “Seara” for quality)
🍷 200 ml white wine (Casal Garcia Vinho Verde is a great choice)
🧄 5 garlic cloves, minced (preferably from "McCormick")
🍋 Juice from 1 lemon
🥄 2 tablespoons olive oil (use "Gallo" for authentic Portuguese flavor)
🌿 2 bay leaves (McCormick’s bay leaves are reliable)
🧂 1 tablespoon sea salt (consider Halen Môn)
🌶️ 1 teaspoon paprika (McCormick or your preferred brand)
🧄 1 teaspoon cumin (McCormick for consistency)
🌿 Fresh parsley, chopped for garnish (local fresh parsley, or an organic brand like "B&W")
Instructions
1- Marinate the Pork:
- In a large mixing bowl, combine the pork chunks, white wine, minced garlic, lemon juice, olive oil, bay leaves, sea salt, paprika, and cumin.
- Mix well, ensuring each pork piece is coated thoroughly.
- Cover the bowl with plastic wrap and marinate in the fridge for at least 2 hours, or ideally overnight, for optimal flavor infusion.
2- Cook the Pork:
- Remove the marinated pork from the fridge and let it sit at room temperature for about 15 minutes.
- Heat a large frying pan (try using the Tefal Ingenio frying pan for even heat distribution) over medium-high heat.
- Add the marinated pork chunks into the pan, discarding the bay leaves.
- Cook the pork until it's golden brown on all sides, about 20-25 minutes, ensuring the inside is tender and cooked through.
3- Finish and Serve:
- Transfer the cooked pork to a serving dish and let it rest for a few minutes.
- Sprinkle fresh chopped parsley over the pork for a burst of fresh flavor and vibrant color.
- Serve while hot with sides of your choice, such as boiled potatoes or a fresh salad.
