Ingredients

Instructions

1- Peel and Soak Cassava:

  • Peel 1 lb of sweet cassava and wash thoroughly.
  • Soak in water for 10 minutes to soften.

2- Grate Cassava:

  • Drain the cassava and grate it using the smallest side of a grater.

3- Squeeze Liquid:

  • Place grated cassava in a cheesecloth.
  • Squeeze out the liquid completely.

4- Prepare Cassava Flour:

  • Transfer the grated cassava to a bowl.
  • Rub between your palms to achieve a flour-like consistency.
  • Add 1/2 teaspoon of salt and mix evenly.

5- Shape and Cook:

  • Use a mini spring form pan in a dry non-stick skillet over low heat.
  • Add 5 spoonfuls of cassava flour mix, forming a 1-inch thick layer.
  • Cook for 5 minutes.
  • Press down gently with a spoon.
  • Remove the pan and flip the bammy.
  • Cook for another 5 minutes until golden.
  • Repeat for remaining flour.

6- Cut Bammy:

  • Slice cooked bammy into four triangular pieces.

7- Soak:

  • Mix 1 cup of coconut milk, a pinch of salt, and 1/4 teaspoon of cinnamon in a bowl.
  • Soak bammy pieces for 10 minutes.

8- Fry:

  • Heat oil in a skillet over medium heat.
  • Add sugar for browning.
  • Pat dry the bammy.
  • Fry each side for 3 minutes or until golden brown.
  • Remove with tongs.
