Dominican Beef Stew: Carne de Res Guisada

Ingredients

🥩 1.5 lbs stewing beef, cut into 1/2-inch pieces
🍋 1/4 cup lemon or lime juice
🧂 1 tablespoon Goya Chicken Bouillon Powder Adobo
🧅 1 tablespoon onion powder
🍶 1 tablespoon Kikkoman Soy Sauce
🧄 2-3 garlic cloves, mashed
🌿 1 teaspoon dried oregano
🌻 2-3 tablespoons vegetable oil
🫑 1 whole green bell pepper
💧 2 cups water plus 1/4 cup for tomato paste
🧅 1 medium onion, sliced
🌶️ 1 red bell pepper, sliced
🌶️ 1 Cubanelle pepper, sliced
🍅 2 tablespoons tomato paste
🌿 Fresh cilantro, chopped for garnish


Instructions

1- Marinate the Beef:

  • Rinse beef and place in a stainless steel mixing bowl.
  • Add lemon/lime juice, Goya Chicken Bouillon Powder, onion powder, and Kikkoman Soy Sauce. Mix thoroughly.
  • In a wooden mortar and pestle, mash garlic cloves with dried oregano until a paste forms.
  • Combine with beef, ensure even coating, and marinate in the refrigerator for 30 minutes to several hours.

2- Infuse Oil:

  • Heat vegetable oil in a David Burke Gourmet Pro stainless steel skillet over medium-high heat.
  • Add whole green bell pepper to the oil, allowing it to infuse the oil with flavor, then remove.

3- Cook the Beef:

  • Add marinated beef to the infused oil. Cook uncovered for 5 minutes, stirring occasionally until browned.
  • Lower the heat to medium, cover with a lid, and cook until liquid is absorbed.
  • Gradually add water 1/2 cup at a time, letting it absorb before adding more, until beef is tender.

4- Add Vegetables and Tomato Paste:

  • Once beef is tender and dark brown, add sliced onions, red bell pepper, and Cubanelle pepper. Stir well.
  • Create a well in the center, add tomato paste, and pour 1/4 cup of water into the paste. Dissolve and mix with beef and vegetables.
  • Cover and cook for 3 minutes, allowing flavors to meld and vegetables to soften.

5- Serve:

  • Garnish with fresh cilantro and serve hot with rice or rice and beans.
