Instructions:
1. Open your can of Spam and squeeze the sides of the can, give it a swift yank to remove the Spam. Slice the Spam into eight even slices.
2. In a small bowl, create the sauce by whisking together the soy sauce, mirin, and sugar until the sugar is completely dissolved.
3. Place the frying pan on the stove over medium-high heat and coat it lightly with cooking spray. Add the Spam slices and fry them until they've turned a nice, golden brown on both sides.
4. Using your heatproof brush, baste both sides of the fried Spam with the soy sauce mixture, allowing it to caramelize. Once caramelized, remove the slices from heat.
5. To prepare your musubi mold, take the cleaned-out Spam can, and line it with a sheet of plastic wrap. Press about a third of a cup of cooked rice into the can, ensuring it's packed into the corners.
6. Lay a piece of the fried Spam on top of the rice, use the plastic wrap edges to cover, and press firmly to make a tight block of Spam and rice.
7. Unwrap the rice and Spam block and place a nori sheet shiny side down on your work surface. Place the Spam-side down on one end of the nori, wrap the nori around the rice and Spam, and seal by wetting the edge of the nori with a bit of water.
8. Repeat the process to make more Spam musubi with the remaining ingredients.
9. Cut the musubi blocks into halves if desired and serve immediately or wrap them in plastic wrap for a great on-the-go snack.
