Ingredients:
- 1 1/2 pounds lean ground beef
- 1 1/2 cups white rice
- Bell peppers (quantity as desired)
- Your favorite melting cheese (such as Oaxaca or mozzarella)
- 1 small white onion, chopped
- 2 Roma tomatoes, chopped
- 1 cup your favorite hot salsa
- 2 cups chicken broth
- Chopped cilantro (to taste)

Instructions:
1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
2. Begin by cleaning your bell peppers: cut off the crown and remove the inside seeds. Wash and chop the remaining bell pepper tops finely. Set aside.
3. Season the hollowed bell peppers with a pinch of salt.
4. In a large pan set over medium heat, add a dash of oil. Once hot, add the chopped bell pepper and onion, frying for three minutes.
5. Add the tomatoes and minced garlic to the pan, frying for another couple of minutes.
6. Add the ground beef, breaking it down into smaller chunks, and cook until browned.
