Ingredients

🦪 1 kg mussels, cleaned and pre-cooked
🧅 ½ large onion, chopped
🧄 2 cloves garlic, minced
🌶️ 1 yellow bell pepper, peeled and cut into medium cubes
🌽 2 tablespoons corn oil
🍚 2½ teacups white rice
🥣 5 teacups vegetable stock or warm water
🍅 4 tomatoes, peeled and cut into medium cubes
🥣 ½ bunch green onions, chopped
🌿 ½ bunch coriander, chopped
🧂 Salt
🫒 Olive oil for drizzling


Instructions

1- Prepare the Pot:

  • Heat 2 tablespoons of corn oil in a rose-gold/copper-colored pot over a portable gas stove.

2- Sauté the Vegetables:

  • Add the chopped onion, minced garlic, and diced yellow bell pepper to the pot.
  • Sauté until the vegetables start to soften.

3- Add Mussels:

  • Stir in the cleaned and pre-cooked mussels, mixing them with the sautéed vegetables.

4- Add Rice:

  • Combine 2½ teacups of white rice, ensuring each grain is coated with oil.

5- Add Partial Vegetables:

  • Mix in half the diced tomatoes, half the chopped green onions, and half the chopped coriander.

6- Pour in Liquids:

  • Cover the mixture with 5 teacups of warm vegetable stock or water.

7- Season:

  • Add salt, and stir to combine well.

8- Cook the Rice:

  • Cover the pot with a lid and allow the rice to cook until the liquid is reduced and the rice is tender.

9- Check Mussels:

  • Discard any mussels that haven’t opened after cooking.

10- Finish with Fresh Ingredients:
- Add the remaining tomatoes, green onions, and coriander.

11- Serve:
- Plate the Arroz Lambe-Lambe, optionally drizzle with olive oil, and enjoy!
