Ingredients:
- 150g Emmentaler cheese
- 150g Bergkäse (or any cheese of your choice such as Comté, Appenzeller, Gouda)
- 1/2 large onion
- 500g homemade Spätzle (or store-bought if desired)
- Butter or clarified butter for frying
- Salt and pepper to taste
- A piece of homemade vegetable broth cube (or ready-made)
Instructions:
1. Begin by grating your cheeses — Emmentaler and Bergkäse, or whichever other cheeses you've chosen.
2. Slice the onion into thin strips.
3. Heat a small cast-iron skillet or any heavy-bottomed pan on the lowest setting and add a dollop of butter or clarified butter.
4. Start caramelizing the onions until they are soft and golden brown.
5. Now add the Spätzle to the pan. Thanks to the oil they were cooked in, they should not stick and remain separate.
6. Season the Spätzle with salt and pepper, and continue to cook until they start to get a bit of color. This is crucial for the formation of a delicious crust on the bottom of the pan.
7. Once the Spätzle have crisped up, sprinkle the grated cheese over the noodles.
8. If you start getting hungry just by looking at the melting cheese, you're on the right track.
9. Add a piece of your homemade vegetable broth cube to the pan. This will help create sublime flavor and moisture for the melting cheese.
