Instructions
1- Preheat the Oven:
- Preheat your oven to 425Β°F (220Β°C).
2- Prepare the Kebab Mixture:
- In a large glass mixing bowl, combine ground chicken, red bell pepper, parsley, onion, garlic, tomato paste, chicken bouillon powder, paprika, chili flakes, salt, black pepper, cumin, and turmeric. Mix until everything is well incorporated.
3- Prepare the Sheet Pan:
- Drizzle 2 tablespoons of olive oil onto a white ceramic-coated sheet pan and spread it evenly.
4- Shape the Kebabs:
- Transfer the chicken mixture onto the sheet pan. Spread evenly to about 1-inch thickness, ensuring to smooth and square the edges using a metal bench scraper or spatula.
- Score the mixture lengthwise to mark evenly sized kebab portions.
5- Cook:
- Drizzle the top with the remaining 2 tablespoons of olive oil.
- Bake in the preheated oven for 22β25 minutes.
6- Handling Excess Liquid:
- Halfway through baking, remove the pan, drain any accumulated liquid, and redefine the kebab separations with the bench scraper.
7- Broil for Browning:
- Switch to the broil setting and cook for an additional 5 minutes until the kebabs are golden and slightly charred on top.
8- Prepare Sumac Onions:
- While kebabs are broiling, combine the red onion, chopped parsley, salt, and sumac in a bowl, mixing well to coat.
9- Serve:
- Serve hot with suggested sides like yellow rice, lettuce, tomatoes, garlic sauce, pita bread, parsley, and lemon wedges.
