Ingredients

🥩 1/2 Kg pork leg, cut into cubes
🌿 Generous amount of Do Valle Cumin Powder
🌶️ Generous amount of Do Valle Black Pepper Powder
🧡 Generous amount of Colorau (Annatto powder)
🍋 1 medium lemon, squeezed
🧄 2 large cloves garlic, crushed with salt
🛢️ 3 tablespoons soybean oil
💧 Cold water, enough to cover the meat


Instructions

1- Prepare the Pork:

  • Rinse 1/2 kg of pork leg under cold water, then cut into 1-inch cubes.

2- Season the Pork:

  • Place pork cubes in a mixing bowl. Add a generous amount of Do Valle cumin powder, Do Valle black pepper powder, and colorau.
  • Squeeze the juice from one medium lemon over the pork. Crush 2 large cloves of garlic with salt and add it to the bowl.
  • Mix thoroughly until the pork is well coated with the seasonings.

3- Marinate:

  • Cover the bowl and let the pork marinate for 10-20 minutes at room temperature for smaller pieces, or overnight in the refrigerator for larger pieces.

4- Sear the Pork:

  • Heat 3 tablespoons of soybean oil in a pressure cooker over high heat using a DAKO gas stove.
  • Once hot, add the marinated pork and sear quickly, stirring with a wooden spoon, until browned but not fully cooked.

5- Pressure Cook:

  • Pour cold water into the pressure cooker until it just covers the pork.
  • Secure the lid and turn the heat to high. Once the pressure cooker reaches full pressure, reduce heat to medium-low and cook for 15 minutes.

6- Release Pressure and Check:

  • Turn off the heat and let the pressure naturally release. Carefully open the lid once it’s safe to do so.

7- Finish the Dish:

  • Turn the heat back on to medium-high, taste the sauce, and adjust the salt if necessary.
  • Allow the sauce to reduce further, creating a slight crust on the pork by stirring occasionally.

8- Serve:

  • Once the sauce reaches the desired thickness and the pork is tender, serve immediately.
