Here's How to Prepare a Batch of Delicious Banana Pancakes in No Time

Sundays are one of my favourite days of the week and that's because I have a lot more time on my hands. I'm more at peace and get to to things at a slower, more relaxed pace, not the hurried one weekdays require.

One of the things I like doing on weekends is making meals I term luxury meals; ones I usually can't cook any other time of the week when I'm pressed for time.

Today I'm home and will soon start on making a batch of banana pancakes which my family loves. This meal right here is not exactly a luxury meal in the real sense of the word, but because my people (hubby and daughter) love it, I have decided to give them this little snack treat before the main meal will be ready hours from now.

Here are the Ingredients I'll be Using for my Banana Pancakes

  • 1 Cup Flour
  • 3-5 Large Bananas
  • 1/4 Cup Sugar
  • 1/8 Teaspoon Baking Soda
  • 1/2 Cup Milk (Evaporated)
  • 2 Eggs
  • Vanilla Extract
  • 1/8 Teaspoon Pepper (Optional)
  • 1 Cup Groundnut Oil

Directions for Making Your Banana Pancakes

  • In a bowl, break eggs and whisk until smooth. Next, add in your milk, sugar, and baking soda and stir this until smooth.

  • In another bowl, pour your flour and then add a little bit of water. I used to add my flour directly into my bowl of egg and milk, but I found it was more difficult to blend both this way and would take a long time to get all the lumps out. Now I usually just mix my flour separately until smooth and then add to the first bowl.

  • Once your flour is smooth enough, add this to the first bowl and stir until well mixed then set aside.

  • Next, peel your banana, cut into large chunks and puree using a blender. Add this pureed banana into your bowl of flour and egg and continue mixing. At this point, you can stir in your vanilla extract.

  • It's usually at this stage I divide my bater in two and spice up one part with pepper.

Please be aware using pepper is completely optional and you can do away with it if you'd rather have all pancakes sweet.

  • Set the bowl of flour and egg bater aside then place a saucepan on low heat. Once the pan is sufficiently heated, pour in a few spoons of groundnut oil, just enough to cover the pan and then some.

Ensure you don't make your oil too much or your banana pancakes will burn before they even fry.

  • Scoop up your bater using a deep spoon and pour into the pan in a circular motion. Continue with this until the circle is formed and filled.

  • Fry until your pancake appears a little golden brown. At this stage, it will be slightly crispy on the outside and fluffy on the inside.

  • Repeat until you have all the pancakes served.

  • To garnish, you can spread some syrup or cream, or slice some banana as toppings and place on top.
