Welcome to my post and hope you are doing good today! 🌹 Today I would like to introduce a pancake made with cucumber with you, It's a traditional pancake from my grandma's home town Chaozhou, a city in the eastern Guangdong province of the China. We suppose to use loofah instead of cucumber in the traditional recipe but my grandma said the texture of cucumber is better than loofah. So we adjust the recipe and use loofah instead of cucumber. It's easy to make and taste very delicious~ This cucumber pancake is sweet and delicious with a satisfying crunchy peanuts in every bite.
Steemit的朋友大家好, 歡迎來看我的帖子~🌹 今天想跟大家介紹一個我外婆的拿手家鄉菜—水瓜烙,這道菜是潮州菜的代表之一,也是我們家下午茶常出現的小食,健康美味又簡單。這次我們用了黃瓜來代替了水瓜,外婆說水瓜太軟,黃瓜會比較有口感,也可以用白蘿蔔代替,吃起來又是另一種風味。軟腍口感的黃瓜餅配上香脆的花生真的是絕配。
Grandma's cucumber pancake 外婆家鄉水瓜烙 👩🍳
INGREDIENTS: 材料:
Cucumber 黃瓜 1200g/2斤
Peanut 花生 6tbsp
Sweet potato starch 蕃薯粉 10 tbsp
Chicken Powder 雞粉 1tsp
Green onion 蔥 optional
Steps: 步驟:
Step 1. Heat up your wok over low heat, and make sure it’s completely dry. Add peanut. Keep stirring continuously for about 5 minutes until the outsides start to get darker and the peanuts get really fragrant.(no oil is needed in this step)

Step 2. Switch off the stove and keep them aside to cool down. Once they are cooled, remove the skin of the peanut by rubbing them lightly with both hand.

Step 3. Crush peanut into small pieces. (This is a traditional method for Chinese crushing dry food into small piece, you can just place the peanut in a plastic bag and crush with a rolling pin.)
3.把花生樁碎。我們家是用石樁,沒有的朋友可以把花生放入保鮮袋,用樟面杖或重物壓碎花生。
Step 4. Remove skin and scoop out the seed from cucumber.
4.黃瓜洗淨去皮去子。
Step 5. Shred the cucumber with a grater.
5.用刨絲器把黃瓜刨絲
Step 6. Heat up your wok over low heat. Cook the cucumber until it shrink and soften.
6.開中小火把黃瓜炒到半熟,微軟
Step 7. Remove from heat. Add sweet potato starch, peanuts, chicken powder and green onion into the shredded cucumber.
7.把黃瓜剩起,加入蕃薯粉,雞粉,花生,葱,把所有材料混合,攪拌均勻。
Step 8. Pour the mixture into a heated non-stick pan with some oil. Fry one side until golden. Flip and brown the other side.
8.平底鑊放油,把攪拌好的黃瓜絲煎至金黃色。
Finished product 完成品🌹
It's easy to make and taste wonderful. You can add some shrimps in this recipe if you like seafood. You can replace the cucumber with turnip, it tastes very delicious too :P Hope you enjoy these recipes I shared today. Cheers~~
