Hello friends, I would love to tell you about this wonderful Venezuelan appetizer, the "scratch" and "brushed" are distinguished by the technique of ice slush and the resulting texture. The "Scratch-Off" is generated by scraping a metal tool in the form of a palette or spoon against a large ice bar, producing a hailstorm of pieces of ice of the millimeter order, coarser and with more interstices than "brushing". The "brushing" is generated by scraping an ice bar with a large brush with metal bristles that produce a much finer and more compact granite than the "scratch"
Denominations in the regions:
Zulia and Falcon: brushed
Caracas and the Andes: scratch
Central-Western Region with the exception of Caracas: frappe
Characteristics:
They are usually marketed by street vendors, who carry a block of ice in a cart. There are also established commercial positions.
Its preparation is quite simple. A manual machine is used to grind the ice, although other street vendors usually use an iron brush to chop it.
Chopped or shredded ice is added a syrup (syrup) of the flavor to choose, being the most popular strawberry, tamarind, lime and lemon, but you can find syrups of various flavors. In some places they put lemon juice and chili. The crushed ice is placed in a glass (usually plastic) up to the limit
