Vegan grocery haul + week meal plan for two persons

Hello friends,

Today I want to share our weekly meal plan and the groceries we got for it.
We tend to make a meal plan for the whole week on saturdays and then go shopping, so that we only buy the things we intend to buy. In addition this method reduces leftovers and food waste because we plan leftovers like if we need spinach and only can buy a big bag of spinach we need to use spinach on two days to eat all of it.

We are both university students so sometimes we eat at lunch at uni, we also plan these days, because for me as a vegan there is only a limited selection of vegan meals in the canteen and some of them are really not good. I'd rather cook in the evenings or come home earlier than completly rely only the canteen food. But to give credit our canteen has at least one vegan meal each day, sometimes only a soup, no vegan has to starve there. That's pretty amazing and some of the meals I really like the taste, they are cheap and no work at all for me.

Here is what we bought on this saturday:

Here is a list (for the people not understanding the german names):
  • tortilla chips
  • ketchup
  • olive oil
  • salsa
  • cooked red beetroot
  • red bell pepper
  • chicory
  • grapes
  • pears
  • lemons
  • tomatoes
  • salad
  • hummus
  • vegan breaded fingers (like chicken)
  • vegan beef crumbles
  • smoked tofu (2)
  • mexican spice
  • vegan sour cream (2)
  • chickpeas
  • kidney beans
  • vegan german dumplings (noodle dough with veggie and seitan filling) (2)
  • dark chocolate

We also had to buy three things fresh on other days which were king oyster mushrooms, potatoes, fresh dill and a new loaf of bread.

The meal plan for the week was:

Saturday: Taco salad
Sunday: Beetroot hummus with vegan chicken fingers
Monday: Fried dumplings with salad
Tuesday: Vegan chili
Wednesday: canteen
Thursday: canteen
Friday: baked smoked tofu with dill potatoes

What did all of this cost us?

Because we are both on a tight budget we go to a cheap supermarket first (Aldi) and the we only buy the items we don't get at the cheap store at special stores, this time we went to Edeka.

In total we spent 42,57€. My boyfriend also bought some non vegan food, but I excluded it, because this is my post and it's about vegan eating.
For food at the uni I spend 2,80€ and 2,30€ for the meals.
One evening my boyfriend ordered take away for us, I think it cost approximately 15 €, but to be honest we could have also just eaten bread for dinner because we had lunch at uni that day.

I also filmed a what I eat in a week this week, which will be uploaded sometimes soon and I will post pictures and sometimes recipes for the meals we cooked this week. So stay tunned!
