I love raw sweets! They taste much better, than baked or cooked sweets. Besides that, they don‘t contain any added sugar or white flour (ingredients I want to reduce as much as possible).
There is just one thing, that usually stops me from preparing raw cakes, truffles etc. Let‘s call it: “Start with soaking the cashews. Yesterday night.”
Since I am a pretty pragmatic chef, who works full time, I normally avoid recipes, that take a lot of prep time.
But: I want to enjoy the benefits of raw food and still save time in the kitchen.
The solution: I decided to create a simple yet tasty sweet, that is done in almost no time.
Contains: Dates! They provide natural sweetness and make the raw bites luscious and soft. A hint of salt contrasts with the sweet notes and matches with walnuts and flax seeds.
If you feel like it, decorate the raw bites with shredded coconut, before serving them!
Ingredients:
handful of walnuts
one tablespoon of flaxseeds
one tablespoon of sunflowerseeds
12 dates
two tablespoons of rolled oats
50 ml coconut oil
salt
The preparation is super easy: Take walnuts, flaxseeds and sunflower seeds, until they got a crumbly texture. Add salt and dates and keep blending. Melt the coconut oil (if it is solid) and add it. Keep blending. In the end add the rolled oats. Take the dough and put it in an ice cube tray or something similar. Put the raw bites in the freezer for five minutes before serving them!
