Vegan Tempeh Stir Fry With Fennel & Peaches
I developed this dish for Vegan Tempeh Stir Fry with Fennel & Peaches on an impulse, which is an admirable and unusual event nowadays. I have actually been mainly eating easy grain bowls and kale salads because they're both fast and cost effective to put together.
I'm studying for a huge test in August that's been requiring all my attention, in addition to work and fitness, so in between once in a while, you'll see great deals of simple and easy dishes from me to share with you guys here on steemit.
In spite of tasting truly delicious, this tempeh stir fry is fast to make. Just slice your veggies, blend together your sauce, and sauté. You can serve the stir fry together with rice as I did here, or boil some rice or soba noodles and include them to the completed dish.

Yield: 2-3 portions
Active ingredients
1 tablespoon of sesame oil
2 cloves garlic
8 oz tempeh, cut into little cubes
1/2 fennel bulb, sliced up very finely
1 peach, diced
1/4 cup of peanut butter
1 tablespoon of tamari or soy sauce
1 tablespoon of rice vinegar
1 tablespoon of toasted sesame oil
1 teaspoon of maple syrup or agave
2-3 scallions, finely sliced
Juice of one lime
Instructions
Heat sesame oil in a big pan over medium heat. Include the garlic and sauté for 2-3 minutes, or up until aromatic.
Now add in the fennel to the skillet and sauté until you can see that it is soft and translucent, this should take about 5-7 minutes. Now add in the peach and tempeh and then stir it all in together. If you see the mixture sticking to the pan, then add a tablespoon of water, then let it cook for another 5 minutes stirring often.
While the stir fry is cooking, blend together the peanut butter, tamari, rice vinegar, toasted sesame oil, and maple syrup.
After the stir fry has already cooked for 5 minutes, include the sauce to the pan and blend together to coat. heat for another minute to warm the sauce through. Then top with the scallions before serving.
Serve along with lime wedges and rice or noodles.

This sounds really delicious! I just need to find some fennikel. Its not the most popular time of year for fennikel in Denmark, so its a bit more difficult to find. PLUS I have never tried tempeh. I have been vegetarian/vegan for nearly 15 years and never tried tempeh! Thanks for the recipe! Keep it up! I love when my newsfeed is bombarded with deliciousness!

What a combination of flavours! Sounds and looks delicious - I'll have to try that. I also have to ask, did you take that photo??
