Vegan Wednesday: Vegan "Egg" Decorating Using Cookies!

Tomorrow is the last day of school before the holidays for my kids. Of course the last day usually calls for parents to bring in multiple treats! Being vegan means my children can not partake in most of the food. So I decided to make them some vegan sugar cookies! I even got a little bit creative and shaped them like eggs and decorated them with icing. Of course I tried a couple and the were absolutely delicious! Super easy to make and we got a decent amount out of one recipe. The one recipe not doubled made 16 large size cookies! Really that is not too bad at all. I really hope they all enjoy them and are happy with my substitution! I thought this was a perfect thing to share for #veganwednesday hosted by @heart-to-heart because being vegan means making substitutions. It means even though we can't do the usual holiday stuff like painting eggs, we xan come uo with new and exciting things!

Vegan Easter Egg Sugar Cookies

INGREDIENTS:
COOKIES
▪1 1/2 cups unbleached all purpose flour
▪1/2 cup whole wheat flour
▪3/4 tsp soda
▪1 tsp powder
▪1 cup golden cane sugar
▪1/2 cup olive oil
▪1/4 cup water
▪1 tsp apple cidar vinegar

ICING
▪2 1/2 tbsp vegan butter
▪2 cups icing sugar
▪1 1/2 tbsp oat milk

DIRECTIONS:
COOKIES

  1. Combine dry ingredients minus the sugar in large bowl.

  2. In seperate bowl combine wet ingredients with the sugar til mixed together.

  3. Add the wet to the dry and mix until well incorporated.

  4. Put in fridge while oven pre-heats. Pre-heat oven to 350°F.

  5. Once pre-heated shape dough balls into egg shapes and flatten a bit. Place on parchment lined pan. Bake for 8-10 min. The cookies will puff a bit and be slightly brown on the bottom.

ICING

  1. Whip the butter in a bowl.

  2. Add the milk and sugar alternately stirring between each addition.

  3. Section out icing and add different color vegan dye to each portion.

DECORATING

  1. Once cool. Add a base color of icing to the cookies with a knife.

  2. Put a few colors in different icing bags with different tios and decorate the "eggs" (cookies).
