Cassava leaf and banana flower curry for my husband

Friends who love healthy food, today I will share stories and cooking. Simple dishes that my mother used to cook.

For the past few days, I have been busy with my husband's unwell condition, so I have to go back and forth to the hospital. And thankfully now my husband's condition is starting to improve, and he has been allowed to go home from the hospital. And my husband asked me to cook cassava leaf vegetables, and he also wanted to eat banana flowers.
And finally it occurred to me to cook cassava leaf curry mixed with banana flowers. Because my husband can't eat spicy food yet, I think this cassava leaf curry with banana flowers is suitable to whet his appetite.

And I immediately prepared the ingredients and seasonings.
The ingredients:

  • One bunch of cassava leaves, about one large handful of cassava leaves
  • One kepok banana flower
  • 250 gr grated coconut

Seasoning:

  • 8 red onions
  • 3 pieces of garlic
  • 4 candlenuts
  • 1 segment of turmeric
  • 1 tomato
  • Salt to taste

Next, boil water to boil the cassava leaves and banana flowers. While waiting for the water to boil, I picked the cassava leaves from the stems then washed them. Then I cleaned the banana flower, removed the hard part of the banana flower until we got the soft part of the banana flower. Then, after the water boils, boil the cassava leaves and banana flowers. Occasionally stir the cassava leaves and banana flowers so they cook evenly.

While waiting for the cassava leaves and banana flowers to cook, I pureed all the spices using a blender.

And I also squeezed the coconut into coconut milk with one and a half glasses of water.

After the cassava leaves and banana flowers are cooked or soft, but don't let them be too soft, otherwise the results won't be delicious. Remove then drain, then I cut the cassava leaves and banana flowers so that the shape becomes smaller.

Saute the spices in a little oil, after the spices feel fragrant and cooked, add the boiled cassava leaves and banana flowers, after mixing all the spices with the cassava leaves and banana flowers, add the coconut milk, stir so that the coconut milk doesn't break. Don't forget to add salt, then adjust the taste.
When the coconut milk has cooked, turn off the stove, and the banana flower cassava leaf curry is ready to be served.
