One of the hardest things to quit when you try to be a propper vegan eating person is cheese - at least for most people who ate a lot of cheese in their former diet.

And this has a reason: the reasons are casamorphins, protein fragments, derived from the digestion of the milk protein, the casein. The symptomatic characteristic of casamorphins is that they have opioid effects ... To produce one kilogramm of cheese 15 to 20 liter of milk are needed - depending on the fat content and the sort of cheese. As milk is turned into cheese, most of the milks water is removed leaving a product full of casein and fat. That´s why dairy products like cheese are concentrated and have high levels of opiates too. (By the way the opiates from mother's milk are there for a reason. They produce a calming effect on the calf, picklet, human baby, the puppy ... and create a good measure of the mother-infant bond)
I don't want to bother you too much about the theorie behind this but I have to admit that I am one of those people who are searching for good cheese substitutes because I loooved eating cheese in all forms.
Lots of the vegan cheezes you can buy in supermarkets are simply made from cheap fats, flavoring, colorants or are produced from companies I don't want to support or are hilarious expensive.
The better sorts of vegan cheezes you can buy are made on a base of nuts like almonds, cashews ... and/or soymilk. These are the sorts I really call foodstuffs (in german: Lebensmittel - stuff to live from) because real nutritive substances are inside. But why not making on your own?
In my next post I will offer some cheeze recipes I've already tried and that turned out to be delicious. Even my omnivore family and friends liked them. Though they do not taste exactly like milk cheeses. Always when you try to copy a product and expect the exact same result as the original you'll fail and be disapointed.
So be open for new taste experiences and leave the cow milk for the calves. ;-)
YES! Cheese has been the hardest thing to cut from my diet. However, I think if my town had more access to plant-based, cruelty-free alternatives I would be having a much easier time!
Oh, I love cheese even though I try to avoid it because it`s not that healthy.
