Lucky I found your post! This is one topic I've been wrestling with too, as I became vegetarian last week.
I think it's pretty simple too. The bees buzz their butts off to go get pollen and convert it to honey. Through their labor they've added value (hehe) and therefore under natural law that belongs to them.
And they have every right to use force to prevent theft of their property :-)
