The other day, my boyfriend (give him a follow! @davidmassena) and I made this delicious meal! This is the Curry Tofu with Ramen that came in the Green Chef Vegan box, and it was so insanely flavorful and delicious! Here is how we made it:
Ingredients:
Baked Curry Tofu
Black Rice Ramen
Peanut Sauce
Lacinato Kale
Bok Choy
Cabbage
Rainbow carrots
Red Bell Pepper
Garlic
Red Onions
Toppings:
Cilantro
Ginger
Crushed Peanuts
Instructions:
We boiled the noodles with the kale and then drained and tossed in the peanut sauce. Meanwhile, we baked the curry-spiced tofu for 30 minutes on a silicone baking sheet, and chopped up and cooked the veggies. Then we threw everything together, and topped with cilantro, pickled ginger, and peanuts! It was insanely easy, only took 30 minutes, and it was DELICIOUS!
