Raw and crunchy salad may not be what you crave right now, but trust me, you would change your mind if you try it. It is very flavorful and most importantly, highly nutritious. I am sure you know how important is to boost your body with antioxidants during this season. And even better if they come from root vegetables and apples, because they are natural for our bodies at this time of year.
CHRISTMAS DAIKON SALAD
Spiralized Daikon Radish with Carrots, Apple & Pomegranate
Vegan β Gluten Free

INGREDIENTS
β’ Daikon Radish Β½ (pealed and spiralized)
β’ Rainbow carrots ( fine Julian cut)
β’ Red Bell peppers (thinly sliced)
β’ Apple into thin slices
β’ Scallion 2 diced
β’ Cilantro ΒΌ cup (only leaves)
β’ Mint leaves
β’ Pomegranate
β’ Crushed peanuts, optional
Toss everything gently in a large bowl with dressing and top with pomegranate.
DRESSING
β’ Peanut butter 1tbs or oil of your choice
β’ Maple syrup 3tbs
β’ Chili paste Β½ tsp
β’ Low sodium Tamari 1tbs
β’ Juice from 1 lemon
β’ Juice from 1 lime
β’ Wakame flakes 1 tsp (substitute for fish sauce)
β’ Garlic powder to taste
β’ Ginger 1/2 tsp (fresh grated or powder)
Blend everything thoroughly with a whisk.

I wonder how it would taste if I put some slices of pear in there?
I think that would taste yummy, I have quinoa salad recipe with pear and pomegranate and that one is delicious as well.

Well, this is a Christmas Salad with a difference @lenasveganliving. I often add radishes to my salads as I love the tangy, spicy flavour. And the dressing looks Yum too. I very rarely overlook anything that has ginger in it. Many thanks for continuing to bless us with your culinary expertise my friend. ( U & R )
