This is literally my favorite salad, usually prepared at Christmas, its main ingredient is shredded hen previously baked or boiled. mayonnaise is added and some vegetables such as boiled potatoes and carrots cut into brunoise. You can also add a touch of mustard a touch of honey and green apple in brunoise and peas.

In Poland we prepare a very similar salad for Christmas! We also add carrots, potatoes, celery, apple, mustard and peas. Instead of hens in our version you will find eggs, so also very similar.

The difference is the acidified cucumbers. They are a bit like picles:



But those cucumbers have been pickled in a brine and left to fermentation for some time. We add to them dill stems and garlic. They have an acidic, deep taste and perfectly break the taste and "heaviness" of mayonnaise. They are also an ideal addition to potatoes.

I'm surprised that in such faraway countries we have so similar salads. I'm very happy because I run FOODspedition for such surprises. 😉
