
Last night I made vegan cavatappi pasta with a shiitake tomato sauce. This was the first time I made this dish. It was really good.
Saute an onion with olive oil, salt, and some oregano

Add frozen/fresh peas and garlic after onion is translucent

Turn heat down to medium and add the shiitakes(you will kill the flavor if heat is too high)

After 5 minutes add 1 can of diced tomatoes. Let simmer while noodles cook

Tomatoes will start to break down after 10 minutes ish

Add 1/2 cup water and 1 cup plant-based meat substitute

When noodles are done mix in sauce and let sit with lid on for 5 minutes

I added nutritional yeast as a parmesan cheese replacement

I know it looks messy, but it was really good, I promise.
