Excellent, I can't wait to get back to Acapulco and try some more of their food, especially the blackbean hamburger. I found a vegan restaurant here in Guadalajara that I really enjoy too. This is their "setas en su jugo", a vegan, mushroom version of the popular "carne en su jugo":
I also ate some great tacos de barbacoa there, with jackfruit inside.
That's awesome! Oyster mushrooms (setas) are SOO good for you, and great for swapping into traditionally meat-based dishes. I'm trying to get VV to bring in jackfruit as well, it's another wonderful, not processed, not soy-based, meat alternative.
