October has always been one of my favourite months, longer nights, changing leaves and in my case Pumpkins, Halloween decorating and baking with all of the festive spices i can get my hands on. Last weekend we hosted a little Stranger Things marathon day with Vegan munchies, and i decided to make Cinnamon Muffins and they are pretty quick and easy to make, so for anyone with a sweet tooth looking for a bit of inspiration these could be for you.
Ingredients
1 1/2 cup self-raising flour
1 cup caster sugar
1 tsp baking soda
1 tsp vanilla
2tsp cinnamon
6 tbsp dairy free butter
1 cup almond milk or whatever dairy free milk you prefer.
Method
- Preheat the oven to 180 degrees
- Mix the flour, sugar, cinnamon, vanilla and baking powder until well combined
- Melt the margarine and add the milk, mix together
- Add the wet and dry ingredients together and mix
- Add mix to cupcake cases in greased tin
- Bake for approx 18 mins
**If you want to add extra flavour you can sprinkle Cinnamon and sugar on top of the mix before it goes in the oven, or my personal preference, pour maple syrup over the finished product.
Here's the finished spread, we melted Tesco Free from Jalapeño and chilli cheese for the nachos and our friends made some delicious homemade guacamole, trust me when i say Vegans still have a lot of opportunities to chow down on some junk food.
