Recipe: Delicious brownie bites with crunchy nuts ~ Vegan, raw & GF

Hello wonderful creatures of Steemit! It is Monday again, and what better way is there to start off the week than with some delicious, crunchy brownie bites?


Oh yes, we said it… cake on a Monday! And its not just because we can. This is a big time favorite both in the crew and the café, and for a good reason. This is the kind of cake you can eat for any occasion, on any time of the day, without the smallest feeling of guilt. Well, you should never feel guilty for eating cake, but you catch my drift. I will go as far as saying that this is a healthy cake. The kind of cake I could (and do) eat for breakfast every now and then, when nothing else is tempting.


When we are attending events with the café, we always serve a raw brownie of some sort, and it is always immensely popular. Next to our infamous “Troll Cake”, the raw brownie is what most people come around to grab first on the menu, and there is no wondering why. It is pure healing, in cake form!

Not only is it super delicious, but it is also filled with goods that will keep you going when you’re out dancing (or whatever wonders you might be up to). The nuts are packed with proteins, good fats and nutrients. The raw cocoa powder is full of antioxidants and other goodies, which keeps you happy and energized. And the dates, next to being a natural sweetener, is full of fiber and a good load of some more antioxidants. Safe to say, it is a bomb of delicacies, made to fill your tummy with love.

They are easy to whip together, require no baking or ovens at all, and can be kept in the freezer for at least some weeks. Perfect to have around if you have unexpected guests you want to treat a little extra, or if you (like me) come home from work and feel like cake for dinner…


Cooking time: 15minutes (minus freezing)
How many: one small tray of brownie fudge bites

Gooey Raw Brownie Bites

400dl Nuts
500dl Dates
4ts Pure vanilla powder
4 tblsp Raw cacao powder
3 tblsp Neutral coconut oil
1 ts Sea salt
Cacao nibs (for garnish)

Note: For this I used a mix of almonds, walnuts and cashews, but feel free to leave some out and mix around with it. Most nuts are brilliant in these bites!


How to do it:

Step 1: Put aside a little handful of nuts for garnishing. Run the rest of the nuts in a food processor until they are a good mix of chunky nuts and flour. It’s nice with a bit of crunch! Put the nuts over in a little bowl, while you blend the dates until smooth.

Step 2: Mix together all the ingredients in the food processor (except the garnish), and blend until you have a gooey mass. If you have a bit of a slow food processor, it might be a good idea to put it over in a bowl and mix a bit by hand underway, so you don’t overheat the food processor (speaking from experience). Adjust with vanilla, cocoa, salt and coconut oil, until you have the perfect brownie batter for your taste. A little salty, a little sweet, and a whole lot of delicious!

Step 3: Cover a small baking dish or something similar with baking paper and spread out the batter and smooth it evenly out on top. Chop the rest of your nuts and sprinkle it on top together with some cacao nibs. Now all you got to do is put in the freezer until it’s firm, and serve!

Enjoy chilled with a warm cup of tea, or a freshly brewed cup of coffee. Oh and.. We recommend making a lot while you're at it, because they will disappear darn quick!
