Gangis, as it is called in Surigao del Sur, is a fish in the surgeonfish family, Acanthuridae. Fish of this genus are known commonly as unicornfishes because of the hornlike extension of the forehead. It is abundant in Surigao del Sur, and can be bought in Barobo, Tandag, and Bislig fish markets. When freshly caught, this fish tastes like heaven! Its white meat is juicy with just the right amount of oils. Take this fish out of the grill as soon as its eyes become cloudy white.
