oh - it itsn't that much left over! its about 1 cup left over after making the kimchi. but lets say I just wanted to just put it on cabbage next time and not make the whole thing with the carrots, radish,leeks, onions. etc.... it could be a fairly quick process.
and despite our friend's bad experience. hahahahaha I've had people (who love kimchi) say this recipe is WAY better than a store-bought version and easily rivals what you would get in a restaurant

yeah i'd need to reduce the pepper flakes myself... but having a bit of sauce left over is nice.. get the benefit even without the full recipe
