Ulog #038 : Foraging for some Sweet Potato Tops

Is this edible where you are?

One of our neighbours wasn't so convinced why sweet potato salad has been always on our menu ever since I arrived in the country. If not my favorite salad in the world, it's the most accessible in the province, in our backyard to be exact.

Sweet potato is known the world over, am just not sure if it's leaves are edible in other places.

Growing-up where every vegetables and fruit trees can be found in our backyard, where distant neighbours from blocks away can just enter our gate and asked for some produce, this sort of vegetable is the most versatile. It can be bought anywhere, but not everyone have such inclination to plant it. I don't know why as it is very easy to grow it anywhere, in the ground or in the pots. Of course, newly planted ones need a bit of attention like water but once it started to grow, it can fend for itself plus the rain.

Many preparations can be done with the root crop, but the leaves can be limited. In the house, making a simple salad is the easiest or mixing it with a stew. For breakfast with rice, tuyo or sausages, a salad is a great combination. Of course, this is a preference.

These ones i foraged in the morning, selecting just the tops or the baby ones. Don't understimate the matured ones as our 100 year-old neighbour preferred those. For us young ones, we leave them alone. There is a huge difference with the taste.

Re-planting the stalks

But incase there are matured stalks that were collected, these are easy to see. Some also have tiny roots starting to grow from crawling in the ground. Select these and re-plant them. If not wanting the leaves, these can grow and produce the known root crops that can be bought in the market.

If the stalks are matured, they can be planted on the same day but one technique here is to let them stand in a container with some water to let the roots develop further. Apparently, they have a higher percentage of growing instead of wilting under the sun.

I grew up having sweet potato tops. Loved it so much, my mom gave me a pot that grows happily in my patio. So easy to care for.

I am also planning a rooftop garden since I live in urban area. Perhaps, sow some sweet potatoes and other greens.

Hello friends, I really like sweet potatoes in different presentations, in stews, salad and in any form, it is very beneficial for its content of folic acid and vitamin C and vitamin E, it is an excellent antioxidant, I love sweet potatoes.
