I don't agree with your statement that many actors weren't known before the series. Lena Headey was in 300, Iain Glen was in Tomb Raider and Resident Evil, to name a few, Jack Gleeson in Batman Begins and I can continue.

I said many because I mainly talked about the youngest actors which GoT launched their carrier, of course that if you speak about the older ones, they already have quite a big resume ;)
