I think it's super important when trying to spread the vegan message to show the opposite side of the spectrum. Most of the time, Kyle and I will eat the same meals... but sometimes Kyle will make his meals a little differently or have something completely different (like mock meats, more sandwiches, etc). I think it's super beneficial to be able to share that with an audience and show the men out there that it is TOTALLY possible to be vegan (and not protein deficient), and eat tasty meals!

I think being a vegan man (as I am also) its important to buck the social conditioning that men who dont eat meat are somehow weak, of course this couldnt be further from the truth as you will know yourself, the opposite is true. Good on your boyfriend for putting himself out there and you for supporting.
I think I would starve to death. lol I do need to eat more fruits and veggies though. I would probably eat more fruit and less meat if I lived in Hawaii. I don't like how grocery stores carry very little variety of fruits and veggies.
Cutting out meat is SOOOO much easier than you think! I'm dating a guy who has never put any thought into his diet (meaning that he eats crap and whatever is closest and most convenient and delicious). Now that he's started cutting most meat out of his diet, he laughs at the concept of it being difficult.
Hard to believe. Do you cook for him?
Ha! He wishes! I’m not much of a cook. I think just seeing what I eat (since I live in a van and don’t cook often, I eat the simplest of things possible) has given him ideas over time. And just making veggie options when he can, like getting a veggie sandwich/wrap instead of a burger. He’s definitely not vegan yet, but any little decrease in consumption helps the cause, as well as your health!
I was about to have a ton of sympathy for you but then I noticed you're in southern Cal. lol Do you spend a lot of time on the beach? I really want to eat more fruit. I failed on that though today when I went to Wal Mart. I did buy some veggies though.
How much a month does it cost you for van life? I've always been a curious person and have looked into van living and small house living but if I had one or 2 roommates I think I could live for free in my house.
Haha no no, no sympathy needed here! It’s all by choice - and it’s a pretty sweet van ;)
And no, I’m a climber so most of my days are spent on rocks, which is a pretty good pairing with van life (and was the inspiration for living in a van in the first place).
If you buy a cheap van, it’s super affordable. If you buy a brand new van, not so much. I’m making $500/month payments so I’m not saving much money at this point. If I lived in it long enough to pay it off, I’d be set! But I’m already making apartment plans for next year, so the van will become an adventure vehicle only.
And if you’re looking to add fruits, I know a girl who CANT ha sleep eating any plants - she eats like a picky 7-year old. So she makes a smoothie every morning to sneak in nutrients. So much tastier and you can pack em in early!

Your man certainly isn't protein deficient (surprising for us fellow vegans :P) But he puts way too much salt in stuff that shouldn't even be salted. That blood pressure...

haha he loves his salt! I'm always on him about it... but this was his day of cooking! He isn't as bad nowadays though :)
He went vegan on his own? Bike riding all over the place would be a pretty good workout. Maybe I should not use my car this summer. lol I would love to eat some non cavandish bananas! It sucks we only have 1 kind of banana at the store but there are hundreds if not thousands of kinds of bananas.

Love this. I think it's very cool that you shared the other side of it. You don't have to eat the exact thing, but you also don't have to compromise. Eat what you love.
I only eat grass fed beef or occasional seafood. Never plants, not fruit or veggies. Been like that on and off for a year then full on for last 6 months. Just eat once a day now, about 1 kg of steak every 23 hours, saves washing up. Pay a local place to cook it for me, they have a professional kitchen and have to wash up anyway. Dont even need a fridge, just a freezer which I fill up about every 10 days. I also have a 6 pack, but I hardly exersize, my body runs on fat for fuel, so I can either eat fat or burn my own. No insulin spikes, no oxidisation from seed oils. easy. Plus I love that the animals I eat, actually feed the biome in the soil. Grass covers about 20% of the dry land surface and requires no interference to grow, not hydrocarbons in to extract carbohydrates out. Nature is a perfect system, the less I do the better. cool that eating plants is working for you though.
