In electric car you can access maximum torque at zero rpm, it means from standstill the electric motor can deliver maximum torque thus produce a huge acceleration.
Even the peak power produced by electric motor is less than that produced by gasoline engine, but why...here comes the main term due to BACK EMF (electromotive force) so for back EMF we first have to know about how motor works.
HOW MOTOR WORKS:
A current carrying wire generates a magnetic field encircling it.
So when a current carrying coil is placed in magnetic field it experience a force, the magnetic field generated by the coil and thus the opposite poles (N) of the coil and (S) of the permanent magnet repel each other thus turning the coil to 180 degrees until the break is reached in commuter and thus the direction of current changes which change the magnetic poles of the coil thus cause further rotation.
WHAT IS BACK EMF:
The motor windings turning inside the magnetic field produces its own emf, this emf is called back emf, which acts against the voltage applied by the battery, so net voltage is less than the applied voltage, back emf increases as speed of motor increases.
CONCLUSION:
So the result is when the car start accelerating from stand still and the motor starts from zero thus there is no back emf , so the motor gives maximum torque in the start which result in huge acceleration, as the speed increases the back emf increases causes decreasing the net voltage supplied to the motor thus the torque starts decreasing as shown in above graph. Thus electric cars have much more acceleration in start than any other gasoline cars.
So this is the simple explanation on why electric cars have huge acceleration, yes there are many other factors which also effects the acceleration of modern electric cars like weight distribution of battery pack spread equally causes very low centre of gravity, new micro fuses used to transfer charge from battery to motor and many more.
