Indian Tea - Cut Chai - The way we LOVE it

Tea, as we all know and many of us are totally in love with it. In various parts of the world, almost all parts of civilization has a slightly different way to prepare the same. Here, within India too, we have perhaps more than 100 recipes to prepare tea. The most common one is ...

Ingredients:

  1. Tea powder/leaves/or a mix of both
  2. Drinking water
  3. Milk
  4. Sugar
  5. Stove

How to prepare:
Place the utensil on the stove burner and if you want to make two cups of tea then pour one cup measure of water and at the same time pour one cup measure of milk too. Note: The measuring cup is the same cup that you should be using to drink (else the measure could be more or less).
Bring the mix to a boil and then add sugar and tea leaves/powder/or a mix of both (many people have different variation and taste according to the quality and taste of the tea by brand or region).
Now the most important part comes. You have to boil the content over and over again and the art is to not let it fall from the stove and keep letting the boil be constant. Gradually you'll see the consistency of the tea begin to be as it should be slightly thicker than water/milk. Once that is done, you do have an option to keep the same for a minute covered by a metal or ceramic plate for one or two minutes and then pour the same on to the cups using the strainer filter (chakni). Now, you have one of the most consumed product in India - The Tea.

If you want to have a small measure of tea then you have to go to a tea vendor and shout. Bhai Sahab - Ek cut Chai dena (Brother - Pass me a small measure of tea).

The price of a Cut Chai today (small measure of tea) in India is approximately Rs.6/- per cut Chai (approximately 100 ml.). We generally begin our day with a cup of tea and in the evening or after an exhaustive day of work we sit and have it with friends. For all and every reason and for no reason too, we prefer to have tea. It is an Indian's best friend.
