I decided I'd try something new here on Steemit and start sharing a few recipes :)
To start with I'll share one that's soooo simple yet very likely to impress all your guests! It's a go-to recipe for all of our summer night buffets in Provence, South East of France :)
Ingredients:
- 6-7 medium red onions
- one roll of puffed pastry
- some olive oil, salt and Provence herbs (thyme, rosemary, oregano)
- Optional for non-vegetarians/vegans: one egg yolk and a little jar of marinated sardines in vinegar/oil
Method:
Chop all your onions. If you have a food processor with a slicing option, just chop your onions in two and throw them in there! Otherwise, wear some goggles, you're gonna cryyyy!
Turn your oven to preheat at 220C, and take your puffed pastry out of the fridge.
Throw all your onions in a pan with olive oil and fry on low heat, stirring frequently to ensure homogeneous frying. Don't let it burn! :) If you sense it's burnign a bit, add more olive oil and lower the heat. Fry until brown, it may take 15-20minutes.
Once your onions are readyyyy, unroll the puffed pastry and put it in your oven-proof dish. If you are not vegan, beat an egg yolk and glaze your pastry with it, insisting on the outer bits. This will give a nice golden shade to your pie when it's cooked! For a vegan option, you can skip this step or glaze with a bit of olive oil.
Pour your onions all over, on a thin and homogeneous layer. Sprinkle with Provence herbs and salt, and if you wish you can add a few sardines on top, like you would on a pizza. It adds a nice sourness that contrasts pretty nicely with the sweetness of the onions.
Pop it in your oven for 9minutes (220C is hot!). If you feel like you need more time, let it a bit longer but keep an eye on it, you don't want it to burn!
