Memoirs of Noodles in Beaufort

We went for a train trip last month. In the transit of the next train, we had three hours to explore Beaufort town. It was 96km from my city, capital of Sabah state in Borneo. We visited the original New Restaurant Kim Wah.

YES, of course we did a research before visiting the places. Beaufort is the home for the best noodles in Sabah and also the best satay.

Why did I say that this was the original?

It's because there was many branches or outlets of KIM Wah restaurants. In Kota Kinabalu. They were famous for frying the best yellow noodle. Well, this day I ordered something delicious.

There were no menu like booklet or wall menus... None at all! We asked them their signature dishes and we decided to have these:

  1. Kan Lao Mian with Char Shao. (干劳面和叉烧)
  2. Claypot Noodles with Pork (沙煲面)
  3. Stir Fried Vegetables

1. KAN LAO MIAN CHAR SHAO

Traditionally egg noodles were cooked, in boiling water, then soaked into cold water and then one more round through the hot water - the preserve the noodles' chewiness and texture.

Chinese people don't cut their noodles because they believed that cutting noodles are bad luck as to shorten long-life.

Then, the noodles will be mixed with seasoning such as salt, pepper, soya sauce - both sweet and salty ones. Sometimes, chefs add sesame oil to bring out the aroma in the noodles.

2. Claypot Noodles with Pork

This was one incredible and it was sizzling hot.

Noodles here were dried and fried first. Then stored. Only cook them with soup when we need them. Example below:-

The noodle soup then would be added with veggies and pork, lastly an egg. They sent us the dish in a claypot while it was still boiling!!

3. Stir-fried Vegetables (Sawi & Peria)

These was the best dishes for me. Green veggies stir fried and also Bittergourd stir fried. They were greeny sweet and not so bitter. I think it was because they were planted and farmed near the Tenom town, where Agricultural District hails. (in the city, many veggies were planted as organics or extremely fertilized with chemicals.)

Well, our journey didn't stop here. We were having a train adventure from the city to Tenom. I'll say goodbye, not to you, but to Beaufort now. Adieu, Beaufort!

Ok didn't know it meant bad luck cutting your noodles - will never do that again :o

Chinese people liked to believe that old folks like to live long lives to see great grandchildren... They also enjoy eating long noodles...

Haha since you stay quite near. Anytime ready then can go . It's quite famous among foreign tourists. When we went there ,majority are westerners, locals only a few...
