Okay, it’s Monday but who said Mondays have to suck?
Fade the Monday blues with this perfect chocolate mousse which is totally forgiving!! It has no white sugar… It’s 💯% vegan and guess what? It’s high in protein and anti-oxidents! 💕

Ingredients:
150gm Dark chocolate (I am using Amul Bitter Chocolate)
300gm silken or soft Tofu
1/4 cup Coconut sugar
A pinch of Salt
Procedure:
- Chop the chocolate bar roughly and set it in a heat proof bowl.
- Bring water to boil in a saucepan. Place the bowl of chocolate over the saucepan to melt the chocolate. (The boiling water shouldn’t touch the base of the bowl)
- While the chocolate is melting, put tofu, a pinch of salt and coconut sugar in a blender. Blend till smooth.
- Check if the chocolate has melted completely with a spatula. If it has, pour the tofu purée and mix well untill tofu and melted chocolate have incorporated well.
- Pour into the serving bowls. Allow it to set in the refrigerator for a few hours before serving.
Garnish with strawberries or any fruits or nuts of your choice. 🍓🍒🥝
*Note:
- You can add vanilla extract or any fruit extract to flavour the mousse.
- You can serve the mousse chilled as well as hot.
- Top the mousse with some sweetened whipped cream if you like.
