I made a sushi cake for my hubby :-) The following is the recipe so hope you'll like it!
How to make a sushi cake (or “salmon oshizushi”):
Ingredients - 2 cups of middle grain rice (or Japanese/Korean rice), 3 Tbs rice vinegar, 4 Tbls sugar, 12 oz of smoked salmon, 1 lemon, ½ thinly sliced onion, 2 Tbs Extra Virgin oil, and salt + black pepper
- Cook rice as instructed on the rice bag. While you are waiting for the rice to be cooked, mix vinegar and sugar
- Mix cooked rice and vinegar w/ sugar and cool off. This is called “sushi rice”.
- Squeeze lemon and mix sliced onion, olive oil, salt & black pepper to make a marinate sauce. Marinate smoked salmon for 1-4hrs
- Once the rice is cooled, cover the pan by plastic wrap (12 inch diameter I used) and put the marinated salmon first. You can put the salmon neatly and as much as you can so that your sushi cake looks beautiful like mine ☺ Then, put a half of “sushi rice” and press rightly. Make the rest of the marinated salmon into bite pieces and put the rest of “sushi rice” and press rightly. You can put some weight on top (e.g., canned corn) to make sure the sushi would be shaped properly.
- Cool it for 1-2hrs and serve it. You can decorate the sushi cake with cream cheese + chive, salmon caviar, etc
