Giving a little touch of grain with the add noise filter on photoshop can enhance your photos
I love street photography! I usually work doing fashion photography but on my free time pictures of random people and beaches are my number one thing to do.
I don't follow any rule when I'm doing street photography because where's the fun in that?
I really add all the noise I want and like! If it's too much I just play with the opacity, a 85% opacity works just perfect when I exagerate with the added noise.
Black & white street photography is really a way to do whatever I want with my pictures. I don't have a special technique when doing a B/W process
Is it a bad thing? Probably.
But if your final image is exactly what you had in mind before taking the picture, then the classic conventions don't matter. That's why I over do it with the noise. I love it! specially when I'm shooting at night
I definitely like more to take pictures at night because I can play with the noise and the B/W process I choose to edit with. It's a kind of digital experimenting. Sounds fun, huh?
I still need to search for more methods and grow up with my street photography, but that's a lifetime goal and with every picture I take there's a leason to be learned

Personally I think that doing a B / W process is such a great option to create at any time because all the colors in a photo are more specific and the B / W lets you imagine and have perceptions and options for not classifying but trying to have different perspectives in the photo.
I love the B / W process but the noise can be a positive aspect when you know its there. Also, I see you get several effects on both types of photos. Keep exploring this interesting world in B/W
