Kue Suri Khas Palembang

Halo teman-teman, kabar semuanya...?
Semoga teman-teman semua dalam keadaan sehat selalu.
Salah satu daerah di Indonesia tepatnya di Palembang provinsi Sumatera Selatan terdapat beberapa makanan khas yang sangat terkenal, antara lain empek-empek, tekwan, kue lapis legit dan beberapa makanan khas lainnya.
Dalam postingan kali ini saya akan menuliskan salah satu resep kue yang rasanya tak kalah enaknya dengan makanan khas tersebut diatas, yaitu Kue Suri.
Kue suri tampak sekilas mirip dengan kue khas kota Medan yaitu bika ambon, namun bedanya kue suri tidak memiliki aroma jeruk.
Proses pembuatannya pun sangat mudah dan simple, begitu juga dengan bahan-bahannya sangat mudah didapat.

Berikut resep dan cara pembuatannya.

  • 10 butir telur
  • 500 gr gula pasir (noleh dikurangi jika tidak ingin terlalu manis)
  • 250 gr tepung terigu
  • 1 bungkus ragi instan
  • 350 ml/ 1 gelas air
  • 1 sdt vanili cair
  • 250 gr margarin/mentega
  • 80 ml susu kental manis

Cara membuat :

  1. Buat biang dulu. Campur 250 gr tepung, ragi instan, dan 350 ml air. Aduk sampai rata. Tutup dengan serbet, diamkan selama 20 menit sampai adonan mengembang.

  2. Sambil menunggu biang jadi. Cairkan 250 gr margarin, dinginkan suhu ruangan.

  3. Campur 10 butir telur, 500 gr gula pasir. Aduk-aduk dengan wisk sampai rata (tidak ada endapan gula pasir), kemudian masukkan biang yang sudah didiamkan 20 menit tadi.
    Aduk sampai tercampur rata. Kemudian masukkan 80 ml susu kental manis. Masukkan 1 sdt vanili cair (boleh bubuk).
    Terakhir masukkan margarin yang sudah dicairkan tadi. Aduk sampai rata. Saring adonan ke wadah lainnya, kemudian tutup dengan serbet, diamkan selama 30 menit.

  4. Setelah 30 menit, tuang langsung adonan ke dalam cetakan kue, (boleh berbentuk bulat ataupun persegi empat, tergantung selera) sudah dioles margarin dan ditaburi tepung terlebih dulu (tidak usah diaduk lagi).
    Kemudian panggang dengan api sedang selama 45 menit. Setelah 45 menit, cek dengan tusuk gigi atau tusuk sate. Kalau tidak lengket berarti kue sudah matang.
    Sebelum kue dilepas dari cetakan, dinginkan dulu kue sampai cetakan tidak lagi terasa panas. Goyang goyangkan cetakan, pinggiran dan tengah cetakan boleh dikikis, baru kue dilepas dari cetakan.

In this post, I will write down one of the cake recipes that tastes no less delicious than the special food mentioned above, namely Suri Cake.
Suri cake at first glance looks similar to the typical cake in Medan, namely bika Ambon, but the difference is that suri cake does not have an orange aroma.
The manufacturing process is very easy and simple, as well as the ingredients are very easy to get.

Here's the recipe and how to make it.

  • 10 eggs
  • 500 grams of sugar (may be reduced if you don't want it to be too sweet) - 250 grams of wheat flour
  • 1 pack of instant yeast
  • 350 ml / 1 glass of water
  • 1 teaspoon liquid vanilla - 250 gr margarine / butter
  • 80 ml of sweetened condensed milk

How to make :

  1. Make the culprit first. Mix 250 grams of flour, instant yeast, and 350 ml of water. Stir well. Cover with a napkin, let stand for 20 minutes until the dough expands.
  2. While waiting for the culprit. Melt 250 grams of margarine, cool to room temperature.
  3. Mix 10 eggs, 500 grams of sugar. Stir with the wisk until blended (no granulated sugar), then add the starter, which has been set aside for 20 minutes. Stir until well blended. Then add 80 ml of sweetened condensed milk. Add 1 teaspoon of liquid vanilla (can be powdered). Finally, add the melted margarine. Stir well. Sieve the dough into another container, then cover with a napkin, let stand for 30 minutes.
  4. After 30 minutes, pour the dough directly into the cake mold, (it can be round or square, depending on your taste) already smeared with margarine and sprinkled with flour (no need to stir again).
    Then bake over medium heat for 45 minutes.
    After 45 minutes, check it with a toothpick or skewer. If it's not sticky it means the cake is ripe. Before removing the cake from the mold, let the cake cool until the mold is no longer hot.
    Shake the mold, the edges and center of the mold can be scrapped, then remove the cake from the mold.
