We currently have an abundance of Avocados here in Durban, and a friend generously gave us a huge mountain of Avos, which we've been having for breakfast, lunch & dinner, plus shared some with friends.
Ingredients required:
Spongy tasty bread squares
Avocado
Thinly sliced Smoked Beef
Red & Yellow Bell Peppers
Thinly sliced Cucumber
Mayonnaise
Smoked Salmon Cream Cheese
First layer:
Spread Cream Cheese on bread square, top with sliced Avo, Mayo & Red Bell Pepper
Second layer:
Smoked Beef, Cucumber & Mayo
Third layer:
Avo, Mayo & Yellow Bell Pepper
Top with final bread square.
Garnish with Smoked Salmon Cream Cheese, like having a Smoked Surf & Turf Sandwich.
Delicious and more than ample for a light lunch.
Hubby and I each had a half portion.
Could not resist sharing this 'sandwich' with you - a tongue in cheek piece in response to our Presidential Budget Speech.
Let them eat bread but there's no money for jam.

You know what that is not just a sandwich that is art in the form of a sandwich I am now officially starving, I would imagine this would work good with bacon too.
BTW what sort of climate does avocado grow in??

I thought it was some kind of dessert sandwich at first (looking like a waffle and all), however, upon closer inspection it's even better than that.
That thin beef mmm, and the avocado of course is a personal fav of mine lol.
Diggin' the cream cheese additive, I'd usually not tend to mix cream cheese/smoked salmon and meet, however I can see it working in this scenario with a nice cold cut.

Yep me and that cream cheese just can't be parted! Wish I could give you some avos, they're so rich and creamy, absolutely delicious. We make the most if avo season, the shop bought ones are always full of bruises and just don't taste the same (no refrigeration I suppose)

Thanks for stopping by @marcel1965, and one often can't eat half of the shop bought avos, so often bruised! You need to visit Durban this time of the year, but will have to put up with extreme heat and humidity ;)

That is the King and Queen of sandwiches. Beautiful presentation...like a piece of art. You are fortunate to have an abundance of avocados! You really have some great flavor combos and textures. Great flavor with the smoked beef. Lots of creaminess with the avocado, mayo and cream cheese. The veggies add additional flavor and crunch and help cleanse the palate. Good luck!
