For this Steemit Food Challenge I am going to make and easy and healthy Lentil Salad with Shrimps.

Lentils are a good source of iron, protein and cholesterol-lowering fiber. They are also an excellent natural source of folate, phosphorus, potassium and magnesium.
Lentils are quick to prepare when compared to other dried legumes, but today I am going to use precooked lentils, these are 100% natural:
Ingredients:
Serves 2-3
- 400 gr precooked lentils 100% natural
- Cherry tomatoes
- 1/4 cup chopped parsley
- 1/2 red pepper
- 1/2 green pepper
- 1/2 peeled cucumber
- 1/2 onion

- 8 frozen and peeled shrimps (unfreeze 30 minutes before)

- 1 peeled garlic clove
- Dry chilli
Salad dressing:
- 1/4 cup extra virgin olive oil
- 3 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- himalayan salt
- juice of 1/2 lemon
Instructions
Rinse lentils with water and drain very well.

Season the shrimps with garlic slices, chilli, salt and olive oil in a small bowl.

Chop parsley and vegetables and transfer to a large bowl.

For the salad dressing combine all the ingredients in a small glass jar and shake it.

Add the lentils and salad dressing and toss to mix.

Finally Stir-Fry shrimps for 2 minutes.

Top the colorful and delicious salad with the shrimps.
