_Ingredients

3 or 4 cups of flour
1 cup of fat / oil
½ teaspoon of salt
3 tablespoons of warm water (or amount needed to make a tender dough)
More fat for frying
Powdered Sugar (optional)

_Elaboration

Mix the flour with the fat / oil and salt. Add enough liquid to form a soft dough. Let the dough rest for half an hour.

Sprinkle flour on the work table, and another little on the kneading stick - if used - so that the dough does not stick while stretching. Knead, hit and work the dough a lot.

Stretch then, leaving it half a centimeter thick. Cut with knife in the form of squares, triangles or circles.
Form the cakes and make a hole in the center.

Put in very hot oil or fat even if you burn the first one. They should be somewhat golden and very tender, never crunchy or rigid. When turning them over, do it carefully so that no oil or fat leaks out, and never use wet utensils.

Remove the cakes carefully, let the oil drain for a few moments and finally leave them on kitchen paper.

Sprinkle with sugar.
