With apples now ready for using in the garden, I got to remembering this recipe I tried last year - APPLE PIE IN A GLASS -mmmmm - a great breakfast alternative. Sweet apples work best, but if you are not too keen on too much sweetness, then green apples eg Granny Smith's will add that tartness.
For an extra touch add whipped coconut cream ontop with a sprinkle of chopped nuts....
Ingredients:
1 banana, sliced
1 apple, peeled and chopped - Gala Apples, Braeburn , Cox's - all sweet apples
1 teaspoon cinnamon
vanilla essence to taste
1/4 teaspoon ground nutmeg
Pinch ground allspice
Coconut milk or Almond or unsweetened soya
Handful of ice if you want it cold
Blend all these ingredients together until smooth - pour into tall glass
Topping if you wish
2 teaspoon coconut cream
drop of vanilla essence - to taste ( becareful how much as you have some in the main smoothie)
Whipp together to form soft peaks - add to top of smoothie
Decorate - chopped nuts - peacon, almond, coconut flakes - add a teaspoon of honey to mix together to look like a "crumble topping"- add to top of cream and ENJOY
