It's a Southern tradition to have black-eyed peas on New Year's Day to bring good luck in the year ahead. Instead of just eating a spoonful, try this recipe which puts a different spin on an ol' black-eyed pea and you just might think you're eating meat! Poor Man's Sausage
1, 15 oz. can black-eyed peas
2/3 cup all-purpose flour
1/2 yellow onion, diced
1 egg, beaten
1 tsp red pepper flakes
1/2 tsp sage
1/2 tsp celery salt
1/2 tsp cumin
1 tsp baking powder
2 tsp Red River Ranch Mesquite ( Get it HERE ) or all-purpose seasoning, to taste
2-3 tablespoons cooking oil
- In a small saucepan, bring the peas to a boil then simmer about 4-5 minutes, stirring occasionally. Drain.
- In a mixing bowl, combine the flour, onion, egg and seasonings.
- Stir in the peas and mash until smooth and combined.
- Flour your hands and pinch off about a heaping tablespoon size of the mixtures and form into balls. Press down to form a patty.
- Heat the cooking grease over medium heat. Fry the patties until golden brown. Serve warm or at room temp.
