3 Homemade Cookie Recipes//Vegan & Delicious

Hmmm Cookies!! Who doesn't love cookies. These are perfect to make around the holidays or any day really. These homemade cookies are vegan, delicious, very simple to make, and much healthier than conventional cookies. The 3 recipes I will be gladly sharing are Classic Chocolate Chip, Snickerdoodle, and Peanut Butter Chocolate Chip Cookies. So, let's start, shall we!!

Classic Chocolate Chip Cookies

Ingredients:
~1/4 cup solid coconut oil
~1/4 cup vegan butter (I used Earth Balance)
~1 cup sugar (brown or cane)
~1 tbsp pure vanilla extract
~1/4 cup plant-based milk (I used unsweetened cashew)
~2 cups white flour (I used Bob's Red Mill)
~1 tsp baking soda
~1 tsp baking powder
~1/2-1 cup dairy free chocolate chips (I used Enjoy Life)

Method:

  1. Cream together the coconut oil, vegan butter, and sugar. I just used a spoon to combine it.
  2. Add the vanilla and cashew milk (or whatever one you use) and stir to combine.
  3. In a separate bowl, combine the flour, baking soda, and baking powder.
  4. Add the flour mixture to the wet mixture and stir until combined.
  5. Stir in the chocolate chips.
  6. Make approximately tbsp size balls and place on a non-stick pan or use parchment paper.
  7. Bake at 350 F for 8-10 minutes. Check on them throughout because everyone has different ovens!

These little bites of heaven remind me of Entenmann's Chocolate Chip Cookies! Definitely a hit with my family, who are all non-vegan by the way.

Snickerdoodle Cookies

Ingredients:
~1/2 cup vegan butter (I used Earth Balance)
~1 cup cane sugar
~1/4 cup non-dairy milk
~tsp pure vanilla extract
~2 cups flour
~1 tsp baking powder
~1 tsp baking soda
~sugar and cinnamon to roll in

Method:

  1. Cream together the vegan butter and sugar. I just used a spoon to combine it.
  2. Add the vanilla and cashew milk (or whatever one you use) and stir to combine.
  3. In a separate bowl, combine the flour, baking soda, and baking powder.
  4. Add the flour mixture to the wet mixture and stir until combined.
  5. Make approximately tbsp size balls, roll in the cinnamon sugar and place on a non-stick pan or use parchment paper.
  6. Don not flatten out cookies before baking, keep them as round balls!
  7. Bake at 350 F for 10-12 minutes. Check on them throughout because everyone has different ovens!

Peanut Butter Chocolate Chip Cookies

Ingredients:
~1/4 cup vegan butter
~1/4 cup natural peanut butter
~1 cup cane sugar
~1/4 cup non-dairy milk
~2 cups flour
~1 tsp baking soda
~1 tsp baking powder
~1/2 cup non-dairy chocolate chips

Method:

  1. Cream together the vegan butter, peanut butter, and sugar. I just used a spoon to combine it.
  2. Add the vanilla and cashew milk (or whatever one you use) and stir to combine.
  3. In a separate bowl, combine the flour, baking soda, and baking powder.
  4. Add the flour mixture to the wet mixture and stir until combined.
  5. Stir in the chocolate chips.
  6. Make approximately tbsp size balls and place on a non-stick pan or use parchment paper.
  7. Bake at 350 F for 10-12 minutes. Check on them throughout because everyone has different ovens!

All these cookies were a hit! All though none of my family is vegan they still all loved them!

I asked them to rate them between the 3 and these were the results:
Classic Chocolate Chip--9.5 out of 10
Snickerdoodle--7 out of 10
Peanut Butter Chocolate Chip--8.5 out of 10

The winner is.....Classic Chocolate Chip!!! Give them a try and if you do please let me know how they come out!! Try them all if you will like, after all they are cookies and they are delicious.
