Easy Shrimp Curry over Quinoa
Need a quick and easy fix for dinner? Try this yummy yummy Shrimp Curry "shortcut." I haven't been grocery shopping and my fridge was empty! I used the ingredients I had and created something for dinner that turned out quite DELICIOUS!
The secret to making this dish quick and easy is the jar of pre-made curry sauce. I usually make my own curry sauce from scratch. As long as you find a good brand of curry sauce, the jar version is comparable to making it from scratch.... with alot less work! I served it with quinoa instead of white rice to cut calories and carbs while adding whole grains to this meal.
Ingredients
2 tbs butter
1 green bell pepper
1/2 chopped yellow onion
1-2 pound(s) of shrimp
1 jar of curry sauce (for this recipe I used a red curry sauce version)
*1/4 cup of broth
*optional seasonings: pepper, garlic powder, paprika
Melt butter in a pan and add shrimp
Season your shrimp. I used garlic power (less sodium than salt), paprika, and pepper. Cook until shrimp is opaque.
Take the shrimp out of the pan and set aside
In the same pan, add onions and bell peppers and cook until bell peppers are tender but not over cooked.
Add half a jar of curry sauce or more depending on size of your jar.
Add broth to thin out the sauce. (I only had low sodium beef broth on hand. I would have used low sodium chicken or vegetable broth if I had the choice.)
Turn heat to low and add shrimp back to pan.
Plate your food and enjoy!
